Banana Blueberry Muffins

These brill blueberry muffins can be enjoyed at any time of the day but they’re especially tasty as an on-the-go brekkie!

Ingredients

  • 3 large mashed bananas
  • 200g blueberries
  • 240ml unsweetened almond milk
  • eggs
  • 1 tbsp baking powder
  • 270g oats

Nutrition

  • Calories: 140kcal
  • Protein: 5g
  • Carbs: 25g
  • Fats: 3g
  • Fibre: 4g

Method:


  1. Preheat your oven to 200C.
  2. Mix together all of the ingredients, except for the blueberries.
  3. Once combined, gently stir the blueberries in.
  4. Pop muffin cases into a muffin tray and spoon the mix equally into each case.
  5. Bake for 20-25 minutes.

To make chocolate muffins just remove the banana and blueberries and add some 100g melted dark chocolate.
