Ingredients

Method:

  1. Heat your oven to 200C and pour the oil into a large pan over a medium heat.
  2. Add the minced beef and cook until browned all over.
  3. Toss in the carrot and cook for a further two minutes.
  4. Stir in the tomato puree and season.
  5. Cook for a few more minutes then add the lentils and stock.
  6. Simmer for 20 minutes before adding the peas.
  7. Meanwhile, bring a large pot to the boil and cook the potatoes for 15 minutes.
  8. Add the cauliflower and continue to cook for a further 10 minutes until tender.
  9. Drain, then return to the pan to mash with the butter, milk and seasoning.
  10. Finally add the cheese, keeping some for topping the pie, and mix well.
  11. Spoon the mince into a large pie dish and top with the mash*.
  12. Sprinkle with the cheese and bake for 30 minutes until golden.

* You will only need about half the mash so keep the rest to serve with another tasty meal for the family!
