Healthy Beef Mince Hot Pot Recipe

Mince? Good. Potatoes? Good! There are no surprises with this hot pot recipe, just an amazing, simple dish to impress your friends and family. By swapping to lean mince, this is a lighter version of the classic, with all the flavour.

Serves 4. Per Portion: 366kcals, 29.7g protein, 5.1g fat, 46g carbs

Ingredients

400g x MuscleFood Extra Lean Beef Steak Mince
1 onion, sliced
2 cloves of garlic, crushed
2 carrots, diced
2 sticks of celery, sliced
150g frozen peas
2 tbsp tomato paste
400ml beef stock
1 tbsp mixed herbs
1 tsp marmite
800g potatoes, peeled and sliced thinly
Low calorie oil spray
Salt and pepper

Step by Step:

  1. Preheat oven 200c
  2. Heat low calorie oil spray in large pan, brown mince then set aside
  3. In same pan fry garlic, onion, carrots and celery until browned
  4. Return mince to pan, add beef stock, herbs, tomato paste and marmite.
  5. Stir well, bring to boil and simmer for 10 minutes to reduce gravy
  6. Season with salt and pepper.
  7. Pour into ovenproof dish, stir in frozen peas.
  8. Place potatoes in overlapping layers to cover the top, spray with a little oil
  9. Bake for 45 minutes until potatoes golden brown
  10. Serve with steamed green vegetables
