Zingy Pork & Ginger Stir Fry Recipe

That time of year has come around where all the fresh herbs and veg are needed to help stave away those colds. We've got the perfect recipe to try: quick to make, packed with good nutrients and easy to double up for meal prep!

Shopping list:

200g x MuscleFood Pork Stir Fry Strips
1 inch of ginger, sliced into sticks
1 lemongrass stem, peeled and sliced
1 clove of garlic, minced
100g egg noodles
1 bag of stir fry vegetables
2 limes, 1 juiced and 1 quartered to serve
Low calorie oil spray

Marinade:
1 tbsp soy sauce
1 tbsp honey
1 tsp sriracha
½ tsp corn starch

Step by Step

  1. In a bowl combine marinade ingredients with the pork strips – set aside.
  2. Heat low calorie oil spray in large frying pan or wok
  3. Quickly fry garlic, ginger and lemongrass
  4. Add pork with sauce and cook for 2‐3 minutes, until golden all over.
  5. Add stir fry veg for 2 mins.
  6. Add noodles and lime juice and stir until evenly coated and warmed through
  7. Serve immediately, served with a lime wedge.
