That time of year has come around where all the fresh herbs and veg are needed to help stave away those colds. We've got the perfect recipe to try: quick to make, packed with good nutrients and easy to double up for meal prep!
Shopping list:
200g x MuscleFood Pork Stir Fry Strips
1 inch of ginger, sliced into sticks
1 lemongrass stem, peeled and sliced
1 clove of garlic, minced
100g egg noodles
1 bag of stir fry vegetables
2 limes, 1 juiced and 1 quartered to serve
Low calorie oil spray
Marinade:
1 tbsp soy sauce
1 tbsp honey
1 tsp sriracha
½ tsp corn starch
Step by Step
- In a bowl combine marinade ingredients with the pork strips – set aside.
- Heat low calorie oil spray in large frying pan or wok
- Quickly fry garlic, ginger and lemongrass
- Add pork with sauce and cook for 2‐3 minutes, until golden all over.
- Add stir fry veg for 2 mins.
- Add noodles and lime juice and stir until evenly coated and warmed through
- Serve immediately, served with a lime wedge.
