Fruity, light and fluffy - yep this Blueberry Banana Bread is delish. Plus it's packed with healthy, wholesome ingredients which will boost your energy - can you think of a better way to snack? We say NAY!

Ingredients

  • 288g almond flour
  • 3-4 super ripe bananas - mashed
  • 1 tsp baking powder
  • 1 tsp vanilla
  • eggs
  • 2 tbsp. Greek yoghurt
  • ½ tsp cinnamon
  • 75g blueberries

Nutrition

  • Calories: 192kcal
  • Protein: 7g
  • Carbs: 12g
  • Fats: 14g
  • Fibre: 1g

Method:


  1. Preheat your oven to 180C and grease and line a loaf tin.
  2. Mix together all the ingredients except the blueberries.
  3. Gently stir the blueberries into the batter then pour it into the lined tin.
  4. Pop a few blueberries on top of the batter for decoration and bake for around 30-45 minutes.
  5. The bread is cooked when a fork or toothpick comes out clean.

P.S. You can swap the blueberries for other fruit such as strawberries or raspberries
