  1. Preheat your oven to 170C and spray some low cal cooking spray into a large pan and heat over a medium high heat.
  2. Toss in your onion and garlic and cook for a few minutes until lightly browned.
  3. Slice the Buffalo into small strips and add to the onion and garlic mix.
  4. Cook for a few minutes until browned all over then add some seasoning with the oregano, lemon juice and spinach.
  5. Let it cook for a few minutes, stirring occasionally.
  6. As that cooks, prepare your pepper by cutting them in half and coring them.
  7. Once your spinach as wilted, fill the peppers with the buffalo mix and top with the mozzarella with a final sprinkle of black pepper.
  8. Cover the dish with some foil and place in the oven for 30 minutes.
  9. After 30 minutes, remove the foil and place back in the oven until for a further 10 minutes or until the cheese turns golden brown.
  10. Serve immediately.
