Method:


  1. Preheat oven to 180 degrees Celsius
  2. Using your hands, rub the cashew butter into the oats & protein powder. It will begin to resemble crumble and look as if it’s disappeared completely, but don’t panic.
  3. Add the cream cheese and mash together using a fork. This will form a very thick mixture that you can use your hands to roll.
  4. Take a small walnut sized chunk of mixture and roll it between your hands into a ball. Then place it onto a lined and greased baking sheet ensuring you leave a gap between each one to allow for it to spread later.
  5. Once you have all your balls (...grow up) on your baking sheet, take a damp fork (run under water to stop it sticking) and squash each one until you have a cookie approximately ½ inch thick.
  6. Bake for 10 – 12 mins, or until lightly golden brown.
  7. Allow to cool before serving, and try not to eat the entire batch in one go!
