  • INGREDIENTS

    Origin: UK

    Serves: 4

    Shelf Life: 5 Days - Arrives fresh so can be frozen

  • STORAGE & PREP

    Available for fresh delivery
    19th to 23rd December

    Freeze on day of receipt or refrigerate at 0 - 4c. Meat must be removed from the pack at least 30 mins before use

    Remove your beef chateaubriand joint out of the packaging, pat dry and bring to room temperature.

    Pre heat your oven to 200°C (fan assisted) or 215°C (without a fan)

    Season the joint just prior to roasting in a heavy based roasting tray.

    Massage a little goose or duck fat into the joint then season with good quality fine sea salt

    Heat the roasting tray on top of the stove until smoking hot

    Next add the chateaubriand and colour on all surface areas over intense heat for 4 to 5 minutes

    Place in centre of oven and roast for approximately 15 minutes reaching a core temperature of minimum 54°C

    Remove from oven and pop onto a clean tray and keep warm by covering with a sheet of tin foil then resting for a minimum of 10 minutes before carving
