  1. Heat up a little rapeseed oil in a fry pan over a medium to high heat.
  2. Once heated, pour in the egg whites after 30seconds, pull the eggs back on all sides to make sure it’s not cooking on one side all the time.
  3. Keep going until all the eggs are cooked then toss in the cheese on one side then pick up the other side and fold over.
  4. Press down around the edges to seal in the cheese.
  5. Turn off the heat and allow it to cook for a further 30 seconds before seasoning and serving.
