Chicken With Mushrooms & Spinach


  • 4 MuscleFood Chicken Breast Fillets – cut into 1" pieces
  • 1 tbsp. Olive Oil
  • 2 cloves minced garlic
  • 400g diced tomatoes – half of can drained
  • 150g baby spinach
  • 250g button mushrooms – quartered
  • 1 tsp. chilli powder
  • 60g grated Parmesan cheese

  1. Start by seasoning your diced Chicken Breast Fillets with salt and pepper.
  2. Pour a good glug of olive oil into a medium sized frying pan and heat over a medium heat.
  3. Once hot, add your chicken pieces and cook until all of the meat is white and just beginning to brown.
  4. Remove the chicken from the pan and allow to rest.
  5. Decrease the temperature of the frying pan and add the minced garlic.
  6. Cook for 2 minutes, or until fragrant, then add the chilli powder tomatoes, spinach and button mushrooms.
  7. Bring to a simmer for 3 minutes then add the chicken again and cook for a further 3 minutes.
  8. Serve between 4 and top with some Parmesan.
