Ingredients

Recipe makes 6 muffins

  • 7 Eggs
  • 3 Chilli Chicken Sausages
  • 7 Cherry Tomatoes – cut into quarters
  • Handful of Spinach and Rocket Salad – finely sliced
  • 20g Fat Free jalapeno cheese – grated
  • 1 Chilli -sliced
  • 1 tsp Grounded Pepper
  • 1 tsp Chilli flakes

Method:


  1. Grill your sausages until cooked through, then cut into tiny pieces.
  2. Pre heat oven to 150 degrees and grease muffin tray with coconut oil and place in the oven.
  3. Whisk all of your eggs in a bowl.
  4. Once tray has heated up, take out of oven and pour evenly your egg mixture into each muffin cup.
  5. Then place your spinach, rocket, tomatoes and chicken sausages into each cup.
  6. Sprinkle your jalapeño cheese on-top of each cup followed on by a sliced chilli
  7. Grind your pepper and chilli flakes on top then place into the oven for 15 minutes!
