Cooking Your Duck

  • Duck Breasts

    1. Pre-heat your oven to 220C/Fan 200C and remove all packaging from your duck breasts
    2. Pat the skin of each duck breast with a paper towel to remove excess moisture, then season to taste with salt and pepper
    3. Place the breasts skin side down on a cold non-stick pan
    4. Turn the heat on the hob up to a medium and fry for 6-8 minutes, until the skin is golden brown
    5. After this, pour off the fat, place your duck breasts skin side up on a rack in a roasting tin - in the middle of the pre-heated oven
    6. For rare, cook for 8 minutes. For Medium, 12 minutes. And for well done, cook for 16 minutes.
    7. Ensure the duck is cooked before serving
