Feisty Chicken Arabiatta


  • Premium Chicken Breast Fillets
  • 200g Protein Pasta
  • 1 tbsp. olive oil
  • onion – chopped
  • ½ garlic bulb – separated into cloves
  • 2 red chillies – deseeded and sliced
  • 265ml red wine
  • 265ml chicken stock
  • 2 tsp. chopped thyme
  • 400g tin chopped tomatoes
  • 2 tbsp. tomato purée
  • Chopped parsley to serve (optional)

  1. Heat the oil in a large pan then add the onions and whole garlic cloves.
  2. Fry these off for 10 minutes, stirring frequently then add the chillies for the final minute. 
  3. Pour in the wine and crank up the heat until the mix is boiling and bubble for 1 minute to cook off the alcohol.
  4. Stir in the stock, tomatoes, tomato purée with the thyme and some seasoning.
  5. Add the chicken breasts and push them under the liquid.
  6. Partly cover the pan and allow the mix to simmer for 45 minutes.
  7. Remove the lid for the final 15 minutes while you cook the protein pasta. 
  8. Once the chicken is tender and the sauce reduced serve on top of a bed of pasta with a little parsley scattered on top
