Warm Chorizo, Chickpea & Pepper Salad

You Will Need…

Serves 2

Then You Just…

  • Slice the chorizo
  • Fry for 4-5 minutes
  • Add chickpeas and cook for another 2 minutes
  • Add peppers and cook for another 2-3 minutes
  • 1 tbsp of olive oil

One Pot Mushroom and Courgette Pasta

One Pot Mushroom Courgette Pasta

You Will Need…

Serves 2

Then You Just…

  • Place all ingredients in a large pot and add 250ml water
  • Bring to the boils
  • Reduce heat and let simmer until pasta is cooked through and the liquid reduced
  • Stir in the Parmesan and cream
  • Serve immediately

Then You Just…

  • Spread 1 tbsp hummus on each tortilla, leaving a 1.5 inch border
  • Cover evenly with beetroot, feta and rocket
  • Roll into wraps

Aubergine and Goats Cheese Lasagne

You Will Need…

Serves 4-6

Then You Just…

  • Preheat oven to 180c
  • Spray a 9x13 inch oven dish with cooking spray
  • Arrange a quarter of the aubergine slices in the bottom of the dish
  • Top with 1 quarter of the pasta sauce
  • Dot with 1 quarter of the goats cheese
  • Repeat to create 3 more layers - the final layer should be goats cheese
  • Bake in the oven for 45-60 minutes – the sauce should be bubbling and the goats cheese melted

You Will Need…

Serves 4-6

Then You Just…

  • Add all ingredients (bar the cauliflower) to your slow cooker
  • Cook for about 6 hours on low
  • Add the cauliflower
  • Cook for another 2 hours
  • Serve with rice (or other accompaniment)

Then You Just…

  • Preheat the grill
  • Mix the turkey, spinach, and goats cheese in a medium bowl
  • Mould into four evenly sized patties
  • Cook under the grill for around 15 minutes

Then You Just…

  • Preheat oven to 200c
  • Clean the mushrooms and remove the stem
  • Spread with pasta sauce and top with mozzarella and any other toppings
  • Bake in the oven for 15 minutes – the cheese should be melted and just starting to bubble
