Grilled Sirloin With Chimichurri


Ingredients

  • 4x 8-9oz Irish Grass Fed Sirloin Steaks
  • 60ml red wine vinegar
  • 3 tbsp. Water
  • onion – chopped
  • garlic cloves – minced
  • 1 tsp. red pepper flakes
  • Juice from 1 lime
  • 60ml of olive oil
  • Handful of fresh parsley – chopped
  • 2 bunches of scallions
  • Salt and pepper

Method:


  1. First of all, start by making your chimichurri sauce. Mix the vinegar, limejuice, water, garlic, 1tsp. salt, 1 tsp. black pepper and the pepper flakes in a bowl along with the oil.
  2. Whisk well until everything is blended well then add the parsley and toss.
  3. Now, heat your grill over a medium to high heat and rub in a little oil on both sides.
  4. Season with salt and pepper and place it into the hot pan.
  5. Cook for 3-4 minutes on each side for medium-rare.
  6. Meanwhile, trim your scallions and the bunch to the grill just after you’ve turned the steak.
  7. Cook until charred, which should be about 5 minutes
  8. Drizzle the chimichurri all over your steaks and serve with the chargrilled scallions.
