Sweet Potato Hash Browns

  1. Pop your diced Sweet Potato into the microwave for 3-4 minutes to soften it up.
  2. Add the chopped cabbage, onion and bacon into a high heat pan. Fry until brown.
  3. At this point, begin your poached eggs by cracking them into a pan of boiling water.
  4. Mash up your sweet potato, add the garlic and a quarter of your onion.
  5. Separate into two portions and squash them into flat circles.
  6. Add back into the pan and fry them until golden brown.
  7. Serve a hash brown with the cabbage, onion and bacon mix. Topped with a poached egg.
