Method:


  1. Place the chicken sausages under the grill to cook.
  2. Then stab the sweet potato with a knife a few times to allow steam to escape and cook it in the microwave for 10 minutes – turning after 5 minutes.
  3. Add the coconut oil to a pan and add the finely sliced red onions.  Allow them to cook untouched until they colour and slightly caramelise. Continue this for 5 minutes before removing from the heat.
  4. Make up the gravy as per the packet instructions; then add the caramelised onions & pepper.
  5. Remove the sweet potato from the microwave and carefully scrape out the centre. Add the butter and stir it in.
  6. Put the sweet potato mash onto a plate, top with the grilled sausages and pour over the hot, sweet gravy.
