  1. Chop up your chicken breast into chunks while you heat a little oil or cooking spray in a fry pan over a medium-high heat.
  2. Once hot, add the chicken and cook until browned on both sides.
  3. Pour in the coconut milk and turn down the heat to a medium then add the Thai green curry paste.
  4. Toss in a teaspoon of sweetener and give everything a good mix.
  5. Leave to reduce for a few minutes until it's at your preferred consistency then serve over some cauliflower rice.
