  1. Simply place all of your prepared vegetables (except the bacon) and meat into a large stew/casserole pot (it will need to have a lid).
  2. Then add your stock cube and seasoning and fill to the top with cold water, so that it covers all the ingredients.
  3. Make sure it’s not filled right to the brim to avoid it boiling over on the hob.
  4. Place the pot on a high heat so that the stew is brought to a boil and is bubbling (this should take around 15 minutes).
  5. Once it’s bubbling, turn the heat to down to low and let the stew simmer away for 2-3 hours. (The longer you leave it, the more flavour it will have and the meat will be tenderer).
  6. When ready to serve, simply cook your bacon medallions until crisp, slice them up and sprinkle them over the top!
