Method:

  1. Preheat your oven to 200oC. Begin to prepare your mushrooms, mixed peppers and onions. Cut into fairly large sizes as these will be going on your skewers!
  2. Spray your baking tray with your low calorie cooking spray. Place your mushrooms, peppers and onions onto your baking tray and oven cook for 20 minutes (check after 15 minutes).
  3. Meanwhile, cut your BBQ chicken breasts into 1 inch sized cubes.
  4. Spray a large, heavy-based non-stick frying pan with your low calorie cooking spray and place over a medium heat and begin to pan fry your chicken.
  5. Whilst everything cooks, begin to prepare your lettuce, tomatoes, peppers and onion for your salad.
  6. Once your chicken has been cooked thoroughly and your vegetables are nice and crispy, begin to create your kebabs sticks! Plate up and add some lemon for some extra zing!
