Ingredients

  • 200g gluten-free flour
  • ½ salt
  • 2 tbsp. olive oil
  • 7g sachet fast-action dried yeast
  • 1 tbsp. chopped rosemary
  • 1 tsp. ground black pepper
  • 125-150ml warm water
  • 210g jar tomato bruschetta topping
  • Fresh topping suggestions

  • 140g mozzarella - sliced
  • ½ avocado - sliced
  • 70g pack rocket
  • Cherry tomatoes - halved
  • Parma ham
  • Olive oil
  • Balsamic vinegar

Method:

  1. Preheat your oven to 220C..
  2. Place the flour, salt, olive oil, rosemary, yeast and pepper into the food processor and pulse until mixed well.
  3. With the motor running, pour in the water slowly until the mix forms a dough – not too sticky but soft.
  4. Tip onto a work surface and knead.
  5. Now, halve the dough and roll each half onto lightly oiled baking sheets until nice and round.
  6. Spread over the tomato topping and rest for about 15 minutes.
  7. Now, bake for 12-15 until the dough is crisp.
  8. Remove from oven and top with all your favourite toppings!
