Lean Sausage and Mash

 

Ingredients


  • 500g lean minced turkey
  • 1 x sage leaf, chopped
  • 3 x sprigs of thyme
  • 1 sprig rosemary
  • 1 red onion, grated
  • 2 x tins Butter beans
  • 200ml chicken stock
  • 3 x cloves garlic
  • Salt & Pepper
  • Green beans
  • Broccoli
  • Carrots

Method:


  1. Mix together the minced turkey, sage leaves, thyme, rosemary, garlic and half grated red onion.
  2. Mould the mixture into the shape of sausages and set aside.
  3. Add the butter beans, red onion and garlic together in a pan with half chicken stock and simmer for 10 mins.
  4. Cook the sausages in a non-stick pan until golden on all sides.
  5. Steam or microwave the broccoli and carrots with garlic and salt
  6. Blend together the butter beans to make a thick mash. Season if necessary.
  7. Reduce half the remaining chicken stock with 1 sprig thyme to make a gravy
  8. Serve the sausages on a bed of mash with the vegetables for a low-carb version of a British classic.
