Ingredients

For the Topping

  • 6 tbsp. sugar free icing sugar replacement
  • Juice from ½ lemon
  • Zest from ½ lemon

Method:


  1. Preheat your oven to 160 degrees C.
  2. Combine all of the cake ingredients in a bowl and whisk until smooth.
  3. Grease a square baking tin with coconut oil and pour in the cake mix.
  4. Bake from 18-20 minutes, or until firm to the touch but still moist.
  5. Remove and cool for 5 minutes.
  6. Mix together the sugar free icing sugar with the lemon juice for the topping. You will need to play around with how much juice to add to icing sugar to ensure your icing is thick and lush.
  7. While the cake is still slightly warm, drizzle over the topping and spread evenly using the back of a spoon.
  8. Sprinkle over the lemon zest and cut into 6 squares.
