- 4 x 200g Chicken Breast Fillets
- 4 x 35g Bacon Medallions
- 180g Reduced Fat Cheddar Cheese
- Low Calorie Cooking Spray
- 4 Tsp. Walden Farms Hickory Smoked BBQ Sauce
- Salt & Pepper For Taste
- 200g Rocket Leaves
- 200g Cucumber
- 200g Cherry Tomatoes
- 1 Tbsp. Balsamic Vinegar
- 3 Tbsp. Extra Virgin Olive Oil
- 1 Tsp. Whole Grain Mustard

Method:
- Butterfly and season your chicken breasts (this is a technique to make a thick piece of meat thinner, and quicker to cook).
- Spray a non-stick frying pan with your low calorie cooking spray and fry on a medium heat. Cook until the edges are opaque, for about 10 minutes, then flip, cover your pan, lower the heat and cook for another 10 minutes.
- Fry or grill your bacon medallions – once cooked, place one on top of each chicken breast.
- Top with a teaspoon of your BBQ Sauce followed by 45g of reduced fat cheese.
- Place your pan with your cooked chicken under your grill, and cook until your cheese has melted.
- For your salad dressing, whisk all your ingredients together in a small bowl except your olive oil, then slowly pour in your olive oil until the dressing has thickened.
- Mix your rocket, sliced cucumber and tomatoes into a bowl. Serve with your chicken for the perfect light meal.
