  1. Butterfly and season your chicken breasts (this is a technique to make a thick piece of meat thinner, and quicker to cook).
  2. Spray a non-stick frying pan with your low calorie cooking spray and fry on a medium heat. Cook until the edges are opaque, for about 10 minutes, then flip, cover your pan, lower the heat and cook for another 10 minutes.
  3. Fry or grill your bacon medallions – once cooked, place one on top of each chicken breast.
  4. Top with a teaspoon of your BBQ Sauce followed by 45g of reduced fat cheese.
  5. Place your pan with your cooked chicken under your grill, and cook until your cheese has melted.
  6. For your salad dressing, whisk all your ingredients together in a small bowl except your olive oil, then slowly pour in your olive oil until the dressing has thickened.
  7. Mix your rocket, sliced cucumber and tomatoes into a bowl. Serve with your chicken for the perfect light meal.
