Ingredients

  • 250g Extra Lean Steak Mince
  • red onion, finely diced
  • 1/2 yellow pepper
  • 1/2 red pepper
  • 1/2 green pepper
  • chilli
  • 1/2 can kidney beans
  • 1/2 can chopped tomatoes
  • 1 heaped tsp hot chilli powder
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • Oil for cooking
  • 1 tsp crushed chilli flakes
  • 1 heaped tsp hot chilli powder
  • Salt & pepper to taste
  • 1 tbsp of fresh coriander, finely chopped
  • 1 beef stock cube
  • garlic clove, minced

Method:


  1. Heat your pan with your chosen oil on a medium heat. Then add your onions and peppers and fry off until softened (roughly 5 minutes). Then add your mince to the pan and cook until brown all the way through.
  2. Then add your kidney beans, tomatoes, water, stock cube, garlic, seasoning and spices and your chilli.
  3. Mix it around until the sauce is well combined and turn the heat down to a simmer.
  4. Let it simmer away for 20-30 minutes until it has thickened (the longer you leave it, the more flavour it will have). Sprinkle over the fresh coriander as you serve (optional).
  5. Pre heat your oven to 180 degrees Celsius.
  6. Place your tortilla(s) in an oven proof dish and fill with your chilli con carne mixture. Fold over the tortilla edges to create your burrito(s). Use the back of a spoon to spread your tomato salsa/puree over the top of your burrito(s).
  7. Grate over your cheese (you would add jalapenos at this point if using them) and place in the oven. Bake for 15 minutes until the cheese has melted and the edges of the tortilla are crisp.
