Peanut Butter & Jelly Cups

Method:


  1. Put the fresh raspberries, stevia and Walden’s fruit spread into a small saucepan with the coconut oil over a low-medium heat.
  2. Stir continuously until mixture has completely reduced down to form a runny jam like consistency.
  3. Place aside and leave to cool and thicken.
  4. Simply combine the peanut butter and whey protein in a bowl and mix until smooth and well combined.
  5. Melt your dark chocolate with the coconut oil and stir until smooth and runny.
  6. Spoon your melted dark chocolate into the cups so that they are filling ¼ of the way. Use the back of the spoon to spread the mixture up the sides of the cases, almost to the top.
  7. Place in the freezer for 10 minutes to set.
  8. Then, take your cups out of the freezer and place a small dollop of the raspberry jam into the cup followed by the peanut butter mixture, making sure they are spread evenly and are level. Repeat this process for all your cups until you’ve used most of the filling mixtures.
  9. Then use the remaining melted chocolate to pour over the filled pbj jelly cups until the cups are completely covered and filled to the top.
  10. Place back in the freezer and leave to set for 15-20 minutes!
