  1. Pre heat your grill to 200 degrees Celsius. Cook your beef mince in a frying pan with your coconut oil until browned and cook through. Place aside in a bowl
  2. Add your pepper, onions and garlic to the pan and fry them off until softened. Then add your mince back to the pan along with the chopped tomatoes and all of the spices.
  3. Place on a low heat and leave to simmer for about 10 minutes
  4. Heat another large frying pan with coconut oil. Pour in your liquid egg whites.
  5. Once the egg whites have set on the bottom, transfer the pan to underneath the grill and leave for 5 to ten minutes until the egg white has set on top and is slightly crisp.
  6. Place your egg white tortilla on a flat baking tray lined with greaseproof/parchment paper. Then, add your spicy beef burrito mixture to the tortilla and sprinkle over some fresh coriander leaves. Then fold up the wrap into a burrito shape.
  7. Spread your tomato salsa all over the top of the burrito and then grate over your cheese until the top is covered. Sprinkle over some more crushed chillies (optional) and then place into the oven. Bake for 10-15 minutes until the cheese has melted and turn golden brown and crisp.
