Ingredients

  • ¼ red onion
  • 400g lamb mince
  • 1 tsp. ras el hanout
  • 1 tsp. harissa
  • 2 mint sprigs - finely chopped
  • 4 coriander sprigs - finely chopped
  • 1 pack mild green chillies
  • 1 tbsp. olive oil
  • 1 lemon - quartered
  • Flatbreads (or gluten-free alternative)
  • To serve

  • Cucumber, carrot matchsticks and red onion slices, all soaked in lemon juice, Chilli flakes
  • Tahini – for dipping

Method:

  1. Fire up the BBQ your heat your grill to hot.
  2. Chop the onion finely and place in a mixing bowl with the mince, ras el hanout, harissa, coriander and mint – season well.
  3. Using your hands, squeeze everything together until well mixed.
  4. Divide mix into 12-16 balls and thread onto skewers alternating with the chillies.
  5. Place under the grill or the BBQ and cook until golden, turning every so often to avoid burning.
  6. This should take about 10 minutes.
  7. Squeeze over a little lemon juice and serve with the flatbreads, tahini, veg and a sprinkling of fresh mint and coriander.
