Mojito Chicken Steaks with Watermelon

Seriously crushin’ on these Mojito chicken steaks – when paired with this super refreshing Cuban Watermelon Salad = #UltimateSummerVibes!

  • Time: 30 Mins


  1. For the dressing – in a large salad bowl, whisk up the olive oil and lime juice. Then season with salt and pepper, to taste.
  2. Add to the bowl - your watermelon cubes, avocado, red onion slices, and freshly chopped mint. Gentle stir to combine.
  3. Cover it with cling film and let it marinade in the fridge while you grill up your Mojito steaks.
  4. Heat coconut oil in a griddle or frying pan on a high heat – when the oil starts to shimmer, add your chicken steaks (which should hit the pan with a sizzle) and reduce to a medium-high heat. Cooking for 5 minutes each side.
  5. Just before serving, sprinkle the crumbled feta cheese on top of your cool watermelon salad along side those Mojito Chicken steaks, fresh off the grill - Nom!
