Ingredients

  • 20 x 20g Lean Beef Meatballs
  • ½ Onion, Chopped
  • 3 x Garlic Cloves, Finely Chopped
  • 1 x Red Onion, Chopped
  • Pinch Of Fresh Parsley
  • 1 Tsp. Cumin Seeds
  • 2 x Sweeteners
  • 3 x Sprigs Coriander, Chopped
  • 6 x Mint Leaves, Chopped
  • For Your Couscous

  • 300g Couscous
  • 1 x Spring Onion, Finely Chopped
  • ¼ Sweet Red Pepper, Chopped
  • Handful Of Dried Cranberries
  • 150g Fresh Kale

Method:

  1. Spray a large, heavy-based non-stick frying pan with your low calorie cooking spray and place over a medium-high heat.
  2. Dice your onions and garlic, and stir fry for 5 minutes until golden. Adding in your meatballs – keep stirring until your meatballs have browned.
  3. Add your chopped tomatoes, pinch of parsley, cumin seeds, sweetener and coriander. Mix well and simmer for 15 minutes on a low heat.
  4. Cook your couscous in a separate saucepan and mix in your spring onions, red onion, dried cranberries and sweet peppers.
  5. Sauté your kale in a frying pan and season with salt.
  6. Place your kale onto a plate followed by your couscous, adding your meatballs for an authentic Moroccan taste.
