  • 500g pack turkey mince
  • 2 tsp. each chilli powder, ground cumin and ground coriander
  • 1 tsp. cinnamon
  • 1 onion - coarsely grated
  • Zest 1 orange, then peeled and orange segments chopped
  • 250g couscous
  • 250ml hot chicken stock
  • 2 tsp. olive oil
  • Small bunch coriander - roughly chopped

  1. Mix together the mince, spices, onion and orange zest in a large bowl.
  2. Roll the mix into 20 walnut sized meatballs.
  3. Meanwhile, place the couscous into a bowl and pour over the chicken stock.
  4. Cover and stand for 10 minutes.
  5. Heat the oil in a large frying pan and add the meatballs, turning often, until brown all over and cooked through.
  6. Fluff the couscous with a fork and stir in the orange segments, coriander and a little seasoning.
  7. Pile onto plates and serve.
