Pan Fried Calves Liver

PAN-FRIED CALVES LIVER

Calves' liver is a fantastic product which requires minimal preparation to deliver a fantastic dish. It works very well paired with pancetta or good quality streaky bacon and, of course, nothing goes better with liver than onions, cooked here until lightly caramelised with balsamic vinegar.


Ingredients

  • 4 slices of calves liver
  • 8 pancetta rashers
  • 25g plain flour, seasoned with salt and pepper
  • 25g butter
  • large onion, halved and thinly sliced
  • Pinch of sugar
  • 2 tbsp balsamic vinegar
  • Salt
  • Freshly ground black pepper

Method:


To Cook:

  1. Melt the butter in a large frying pan and fry the onions and sugar over a medium heat, stirring frequently, for 7-8 minutes until nicely browned.
  2. Season with salt and pepper, add the balsamic vinegar and leave it to bubble up for a few seconds. Keep warm.
  3. Grill the pancetta until beginning to crisp at the edges. Keep warm.
  4. Season the liver on both sides with salt and pepper and then coat lightly in the seasoned flour. Shake off the excess.
  5. Heat another large frying pan over a high heat. Add the oil and then the slices of liver and cook them over a high heat for 30 seconds on each side, the object being to have the liver nicely browned on the outside, yet still pink and juicy on the inside.
