Ingredients

  • 1 tbsp. vegetable oil
  • 200g couscous
  • 1 chicken stock cube
  • 1 large red onion - halved and thinly sliced
  • 600g chicken fillets
  • 4 tbsp. tagine spice paste or 2 tbsp. harissa
  • 190ml bottle pomegranate juice
  • 100g pomegranate seeds
  • 100g pack toasted flaked almond
  • Small pack mint – chopped

Method:

  1. Boil the kettle and heat the oil in a large frying pan.
  2. Tip the couscous into a bowl, sprinkle over half the stock cube and pour over the boiling water.
  3. Cover with cling film and rest.
  4. Meanwhile, fry the onion until soft, then add the chicken fillets.
  5. Brown all over before adding the tagine paste or harissa and pomegranate juice.
  6. Sprinkle over the rest of the stock cube and simmer uncovered for 10 minutes until the sauce has thickened and chicken cooked through.
  7. Stir in the pomegranate seeds saving a few for decoration.
  8. After 5 minutes, fluff the couscous and stir through the almonds and mint.
  9. Spoon some couscous onto a plate and top with the chicken.
