Method:


  1. Pre heat oven to 180C.
  2. Drizzle oil, paprika and seasoning over sweet potato and bake for 25-30 minutes.
  3. Coat chicken in flour, then egg, then oats.
  4. Heat coconut oil in a pan.
  5. Cook chicken for 5 minutes each side.
  6. Grate together the courgette, carrot and beetroot.
  7. Add lemon and season.
  8. Serve and enjoy!
