Ingredients

For the Filling

  • 15 macadamia nuts
  • 3tbsp coconut flour
  • 1tbsp lemon zest
  • 1 lemon, lemon juice
  • 4tbsp vanilla whey
  • 60ml unsweetened almond milk

For the Lemon Icing & Topping

  • 3tbsp fat free Greek yoghurt
  • Squeeze lemon juice
  • 2tsp lemon zest
  • Sprinkle of lemon zest
  • Sprinkle of desiccated coconut

Method:


  1. Preheat your oven to 180 degrees and line your baking tray with coconut oil.
  2. Whisk your base together in a bowl and place in the oven for around 10-15 minutes.
  3. Whilst that's baking, mix the filling ingredients together, then pour on-top of your base.
  4. Bake for a further 15 minutes.
  5. Whilst they're baking, mix your lemon icing ingredients together in a bowl with a fork.
  6. Once the bars are baked, spread the icing evenly over the top with a silicone spatula.
  7. Sprinkle over your remaining toppings & slice into 6 bars!
