Ingredients
- 100g dried quinoa
- Handful of parsley – roughly chopped
- 300g fresh tomatoes – diced
- 100g cucumber – diced
- 1 tbsp. olive oil
- 2 tbsp. balsamic vinegar
- Zest and juice from ½ lemon
- 1 tsp. agave
- ½ garlic clove – crushed
- Mixed leaves to serve

Method:
- Pop the quinoa on to bubble away according to packet instructions then cool once cooked.
- Mix together the olive oil, vinegar, lemon juice, agave and garlic.
- Dress a large serving plate with the mixed salad leaves.
- Mix together the quinoa, tomato and cucumber along with the salad dressing.
- Serve on top of the salad leaves.
