  • 100g dried quinoa
  • Handful of parsley – roughly chopped
  • 300g fresh tomatoes – diced
  • 100g cucumber – diced
  • 1 tbsp. olive oil
  • 2 tbsp. balsamic vinegar
  • Zest and juice from ½ lemon
  • 1 tsp. agave
  • ½ garlic clove – crushed
  • Mixed leaves to serve

  1. Pop the quinoa on to bubble away according to packet instructions then cool once cooked.
  2. Mix together the olive oil, vinegar, lemon juice, agave and garlic.
  3. Dress a large serving plate with the mixed salad leaves.
  4. Mix together the quinoa, tomato and cucumber along with the salad dressing.
  5. Serve on top of the salad leaves.
