Love a good Scotch Egg? You may be feeling forced to swear them off your healthy eating plan for 2017… Well not anymore, as we’ve cracked the secret for Slimming-Friendly Scotch Eggs!

Method:


  1. Using a large spoon, lower the eggs into a pan of hot water. Bring water to a boil, then lower the heat to simmer.
  2. Take each sausage and squeeze the sausage meat out of the skin. Mold the sausage meat into two balls.
  3. Peel the eggs, add one-half of the Sausage meat and mould it around the boiled egg.
  4. Dip each egg into the beaten egg, then quickly roll it in the Smash. You only need a thin coating of Smash.
  5. Place each coated egg onto a baking tray and spray with Fry light before cooking at 190 °C for 20-25 minutes, turning once halfway through.
