Sirloin Steak With Pepper Sauce


Ingredients

  • 2 x Extra Lean Great British Sirloin Steaks
  • ½ tbsp. black peppercorns
  • 1 carrot – peeled and sliced
  • 1 sweet potato – peeled and cubed
  • 1 clove garlic – peeled
  • Sprinkle of fresh thyme
  • A spray of olive oil
  • 20 ml beef stock
  • 20 ml cognac
  • 20 ml extra low fat sour cream
  • Sprinkle of fresh chives

Method:


  1. Preheat your oven to 200C then chop up the carrot and sweet potato.
  2. As your oven heat, crush the peppercorns until no whole peppercorns remain then sprinkle a little salt onto your sirloin.
  3. Toss the veggies onto a roasting tin and pop them in the oven along with the whole clove of garlic and a drizzle of olive oil.
  4. Bake for 45 mins.
  5. Meanwhile, rinse the salt off your steak and pat dry.
  6. Press the crushed peppercorns into the steak and heat a spray of olive oil in a large fry pan.
  7. Once hot, sear the steak for around 3 mins on each side or slightly longer depending on how “done” you like it.
  8. Remove from the heat, cover with foil and allow to rest.
  9. Next, wipe the fry pan clean and add the cognac. Bring to the boil to burn off the alcohol.
  10. Add the beef stock and boil for 10 mins.
  11. Meanwhile chop up the herbs and stir in the low fat sour cream to the beef/cognac sauce. Mix in the herbs and season with a little salt and pepper – if needed.
  12. Remove the veggies from the oven and squeeze the garlic clove all over them.
  13. Plate up your sirloin with a handful of veggies and a generous drizzle of pepper sauce.
