  • Mild olive oil
  • 100g pack raw cooking chorizo
  • 1 Onion - finely chopped
  • 260g Baby spinach - washed
  • 2 x 140g skinless hake fillets
  • 3 tbsp. Thai Green Curry Paste
  • ½ tsp sweet smoked paprika
  • 1 Red chilli, deseeded and shredded
  • 400g can cannellini beans - drained
  • Juice ½ lemon

  1. Heat the grill to high and pop a full kettle of water on to boil.
  2. Heat 1 tsp. of oil in a large frying pan and squeeze the meat from the chorizo into the pan.
  3. After 5 minutes, add the onion and fry until golden.
  4. Put the spinach into a colander and pour over the boiled water. Once wilted, run under a cold tap and squeeze any excess water.
  5. Rub the fish with a little oil and place on top of a baking tray covered with foil.
  6. Season well and sprinkle over the paprika.
  7. Toss the chilli into the pan with the chorizo to warm for one minute, then add the beans, spinach and lemon juice.
  8. Pop the fish under the hot grill until flaky, but not dry – about 5 minutes.
  9. Once cooked, dish up with a bed of spinach and chorizo topped with the fish.
