SOUTH AFRICAN BOBOTIE
Ingredients
- 400g Extra Lean Mince
- 1 onion – finely chopped
- 1 large garlic clove – finely chopped
- 1 tsp. mixed herbs
- 35g Mango or Peach Chutney
- 25g Madras Curry Paste
- 1 clove
- 2 allspice berries
- ½ tsp. salt
- 1 bay leaf
- 30g sultanas
- 1 slice of bread soaked in cold water
- 1 egg
- 150ml milk
Method:
- Heat a pan over a medium heat with a spray of cooking oil and add the onion.
- Cook until translucent then add the garlic along with the 400g of Extra Lean Mince.
- Give everything a stir.
- Once the beef is browned add the mixed herbs, chutney, curry paste, clove, allspice berries, salt, bay leaf and 30g of sultanas.
- Stir everything together and reduce the heat to low then cook for 5-10 minutes.
- Meanwhile drain the bread from the water and break it off into pieces and add to the pan.
- Stir into the mixture then remove from the heat and allow to rest.
- Crack the egg into a bowl, add the milk and whisk together.
- Grab a baking tray and tip your meat mixture into the base.
- Top with the egg/milk mix then add two extra bay leaves, one on each side of the plate.
- Place in a preheated oven at 160C (175C Fan) for 30-35 minutes until the top is nice and brown.
