South African Bobotie

SOUTH AFRICAN BOBOTIE


Ingredients

  • 400g Extra Lean Mince
  • 1 onion – finely chopped
  • 1 large garlic clove – finely chopped
  • 1 tsp. mixed herbs
  • 35g Mango or Peach Chutney
  • 25g Madras Curry Paste
  • 1 clove
  • 2 allspice berries
  • ½ tsp. salt
  • 1 bay leaf
  • 30g sultanas
  • 1 slice of bread soaked in cold water
  • 1 egg
  • 150ml milk

Method:


  1. Heat a pan over a medium heat with a spray of cooking oil and add the onion.
  2. Cook until translucent then add the garlic along with the 400g of Extra Lean Mince.
  3. Give everything a stir.
  4. Once the beef is browned add the mixed herbs, chutney, curry paste, clove, allspice berries, salt, bay leaf and 30g of sultanas.
  5. Stir everything together and reduce the heat to low then cook for 5-10 minutes.
  6. Meanwhile drain the bread from the water and break it off into pieces and add to the pan.
  7. Stir into the mixture then remove from the heat and allow to rest.
  8. Crack the egg into a bowl, add the milk and whisk together.
  9. Grab a baking tray and tip your meat mixture into the base.
  10. Top with the egg/milk mix then add two extra bay leaves, one on each side of the plate.
  11. Place in a preheated oven at 160C (175C Fan) for 30-35 minutes until the top is nice and brown.
