Satay Chicken Skewers with Salad

Method:


  1. Blend together the chillies, garlic, soy sauce, ginger, peanut butter and juice of 2 limes to make the satay mix for the chicken.
  2. Cut the chicken into bite-sized pieces, pierce onto skewers and cover with the satay mix
  3. Place under the grill to cook, turning when brown
  4. To make the salad, use a potato peeler and peel lengthway strips of the cucumber
  5. Chop the red onion, spring onions and fresh mint and add to the cucumber
  6. Mix together fish sauce, soy sauce and juice and zest of 1 lime to make the dressing.
  7. Toss the salad in the dressing and serve with the freshly grilled satay skewer
