  • 4 x 113g Minute Steaks
  • 4 x Whole Grain Tortillas
  • 1 x Avocado
  • 1-2 Tbsp. Lime Juice
  • 1 x Finely Chopped Red Chillies (Seeds Removed)
  • 2 x Finely Chopped Tomatoes
  • 25g Of Chopped Coriander
  • 6 Tbsp. Fresh Salsa
  • 62g Black Beans
  • 190g Instant Brown Rice
  • ¼ Tsp. Of Ground Pepper
  • Sprinkle Of Reduced Fat Cheese
  • ½ Cup Of Water

  1. Firstly, take your avocados and mash them up until smooth. Adding in your finely chopped tomatoes, red chillies, chopped coriander and 1-2 tbsp. of lime juice. Mix together and put aside.
  2. Season your steaks with pepper and add to a pre-heated pan with your low calorie cooking spray. Cook on a high heat for 3-5 minutes, once cooked leave to stand for a few minutes and slice into strips.
  3. Grab a pan with a lid and throw in your fresh salsa and ½ cup of water and bring to boil. Once boiled add your instant cook brown rice and allow to simmer for 5 minutes before stirring in your black beans for a further 5 minutes, or until the liquid has gone. Keep stirring making sure everything is mixed together.
  4. Time to serve up – take your whole grain tortillas, add a few spoons of your rice mixture, your sliced steaks and guacamole. Wrap it all up and enjoy.
