Sweet Potato and Turkey Chilli

Method:


  1. Put the onion in a pan over a low heat with a little oil and cook for 10 minutes or until the onion is nice and soft. Then add the garlic, chilli or chilli flakes, thyme cumin, cayenne, paprika and cook for 1 further minute. Then tip in the chilli beans and sweet potatoes and stir everything together. Take the empty chilli bean can and fill it about 1/3 full of water. Tip this in to the pan, turn the heat up a little and then pop a lid on it and cook for about 5 minutes. Then add the turkey season well with salt and pepper and cook for about 5-8 minutes or until the turkey is completely cooked through.
  2. Whilst the chilli is cooking cook your rice, quinoa or which every veg your like according to the manufacturers instructions and set aside.
  3. Season the chilli to taste adding more cayenne, paprika and salt and pepper if it needs it and serve.
  4. This is one very big portion or two smaller portions.
