  • 2 tsp Coconut Oil
  • 250g Frozen Prawns
  • 1 Bunch Spring Onions
  • 1 Green Bell Pepper - chopped
  • 140g Pineapple – chopped into chunks
  • 3 tbsp. Thai Green Curry Paste
  • 4 tsp. Light Soy Sauce
  • 300g Cooked Brown Basmati Rice
  • 2 Large Eggs – light beaten
  • 140g Frozen Peas
  • 225g Bamboo Shoots – drained
  • 2 Limes – 1 juiced
  • Coriander to serve

  1. Heat the oil in a large fry pan and add the spring onion whites. Fry for two minutes before adding the pepper. Continue to fry for one minute, then add in the pineapple and fry for a further minute.
  2. Stir in curry paste and soy sauce.
  3. Add the cooked rice and fry until hot.
  4. Push the rice to one side and pour the egg into the other.
  5. Fold in the peas, bamboo shoots and prawns into the rice and egg until the prawns are cooked through and peas tender.
  6. Stir in the spring onion greens with limejuice and coriander.
  7. Serve with extra lime wedges.
