  • 250g turkey mince
  • ½ small pack coriander - stems chopped, leaves reserved
  • 1 garlic clove
  • 1 tbsp. fish sauce
  • 2 tbsp. Thai red curry paste
  • 400ml can full fat coconut milk
  • 500ml chicken or vegetable stock
  • Zest and juice 2 limes
  • 300g pack stir-fry vegetables
  • 200g pack cooked egg or rice noodle

  1. Pop the coriander stems and garlic into a food processor and pulse until finely chopped.
  2. Tip in the turkey mince and 1 tsp. of fish sauce and blend well.
  3. Roll into meatballs about 3cm in diameter.
  4. Meanwhile, heat the Thai curry paste in a large pan along with a splash of water.
  5. Pour in the coconut milk, stock, lime zest and juice and the rest of the fish sauce.
  6. Bring the lot to the boil, add the meatballs and simmer for about 3 minutes.
  7. Add the veggies and cook for a further 5 minutes or until the meatballs are cooked through.
  8. Now, add the noodles to warm through, season (if needed) and pour into two bowls with a topping of coriander.
