Turkey Burgers & Beetroot Relish


  • 500g Turkey Mince
  • 2 tsp. fresh thyme – chopped
  • lemon
  • 250g cooked beetroot – peeled and diced (not in vinegar)
  • 1 small red onion – finely sliced
  • 2 tbsp. chopped parsley
  • 2 tbsp. Extra Virgin Olive Oil
  • 2 tsp. wholegrain mustard
  • Gem lettuce to serve

  1. Place the turkey mince and thyme into a bowl and mix well. Grate in the zest of the lemon and season with a pinch of salt and pepper
  2. Again, mix well and then make 4 even turkey patties.
  3. Cover and place the patties to one side as you make your relish.
  4. Mix the chopped beetroot with the juice of ½ the lemon along with onion, parsley, oil and mustard.
  5. Heat up your BBQ until hot then place your patties on to the grill.
  6. Cook for approx. 6 mins on each side.
  7. When the juices run clear, serve the patties on top of the gem lettuce along with the beetroot relish.
