Zesty Herb Roast Chicken

Not only a fantastic source of protein, chicken also contains essential vitamins like B6 and B12, riboflavin and some Omega-3 fatty acids! So make the most of your Sunday meals with this healthy roast recipe and remember, remove the skin before eating for an extra lean treat.


  • 1 MuscleFood Corn-Fed Chicken
  • 1 large lemon, cut in half
  • 1 tbsp mixed dried herbs
  • 1 tbsp Extra Virgin Olive Oil
  • Salt and pepper to season
  • New potatoes and seasonal veg to serve

  1. Preheat your oven to 190° C.
  2. Place your whole chicken breast side up in a roasting try and place one half of the lemon in the cavity of the bird.
  3. Tie the legs together, if you wish.
  4. Squeeze the juice of the other lemon into a small bowl and add the herbs and olive oil.
  5. Stir well then brush the bird with the zesty mix until it’s well coated.
  6. Season with some salt and pepper if you wish, then pop the bird into the oven uncovered for 90 min
  7. Baste occasionally.
  8. You know your chicken is cooked when the juices run clear and not pink.
  9. Once they do run clear, remove from the oven, tent with tin foil and allow to rest for 10 min before carving.
  10. Serve with new potatoes, steamed seasonal veg and lashings of mushroom and onion gravy.
