Pop all ingredients into a blender and whizz together until you have a smooth batter.
Melt some coconut oil in a flat pan.
Using a ladle, spoon a little mixture into the middle and cook until bubbles appear on top.
Flip, and cook for a further few minutes to ensure the pancakes are cooked through.
Serve with a drizzle of your favourite Guilt Free Syrup and fruit.
