Method:

  1. Preheat your oven to 200°C.
  2. Toast a slice of your protein bread in your toaster for 2-3 minutes until dry. Pop into your blender with your parmesan, herbs, onion powder, along with a pinch of salt and pepper.
  3. Slice your chicken breasts in half horizontally, then into thin strips. Dip into your egg whites before covering evenly with your breadcrumbs. Leave to dry for 2 minutes.
  4. Place your chicken on a baking tray and bake for 10 minutes on each side.
  5. Dice your avocado and separate your lettuce leaves.
  6. Take your chicken out your oven, fill each lettuce boat with chicken, salsa and your avocado!
