Ingredients
10 x MuscleFood Extra Lean Chicken Meatballs
400ml chicken stock
1 garlic clove, crushed
50g dry orzo pasta
½ onion, diced
1 carrot, diced
60g spinach
6 button mushrooms, sliced
¼ tsp turmeric
¼ tsp red chilli flakes
Low calorie oil spray
Salt and pepper
Method:
- In a large pan, heat low calorie oil spray and fry meatballs on all sides until brown.
- Remove and set aside
- In same pan fry onion and carrot, until tender
- Add garlic, turmeric, chilli flakes, and mushrooms
- Add chicken stock, cover and bring to boil
- Once boiling add orzo and meatballs.
- Cover and simmer for 7‐8 minutes, until orzo is tender
- Add spinach and continue to cook until it wilts
- Season and serve
