Chicken Meatball Soup Recipe

Chicken soup is good for the soul! The perfect dish for days when you're feeling in need of a comforting, nourishing meal. Made easy with our chicken meatballs and packed with nourishing veg, this is just what you need for those down days

Serves 2. Per Portion: 230kcals, 25g protein,. 3.1g fat, 23.9g carbs

Ingredients

10 x MuscleFood Extra Lean Chicken Meatballs
400ml chicken stock
1 garlic clove, crushed
50g dry orzo pasta
½ onion, diced
1 carrot, diced
60g spinach
6 button mushrooms, sliced
¼ tsp turmeric
¼ tsp red chilli flakes
Low calorie oil spray
Salt and pepper

Method:

  1. In a large pan, heat low calorie oil spray and fry meatballs on all sides until brown.
  2. Remove and set aside
  3. In same pan fry onion and carrot, until tender
  4. Add garlic, turmeric, chilli flakes, and mushrooms
  5. Add chicken stock, cover and bring to boil
  6. Once boiling add orzo and meatballs.
  7. Cover and simmer for 7‐8 minutes, until orzo is tender
  8. Add spinach and continue to cook until it wilts
  9. Season and serve
